Cabernet, when young has a tendency
to lean toward dryness or slight astringency.
With a moderate amount of time in the bottle however, they tend to reveal
themselves as both elegant and complex. While most Cabernet is blended to
achieve an earlier drink ability, a well-aged, unblended Cabernet can be the
perfect accompaniment to the heartiest of dishes.
Merlots often bear resemblance to
the richness and complexities of sun-ripened plums. Typically medium-bodied
wines with moderate acidity, their softness and full-flavor make them
unquestionably versatile in their imbibements.
Zinfandel is typically rich, lively
and heavily extracted. Aromas and flavors are often cited as being akin to
wild brambles and light white pepper. Exuberantly
ripe yet sporting a lightly acidic finish, Zinfandel holds up well against
the
heartiest of dishes.
